homemade Carrot Soup


  • 4 cups carrots, peeled and chopped

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 4 cups vegetable broth (or chicken broth if you prefer)

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon ground coriander

  • 1/2 teaspoon ground ginger

  • Salt and pepper to taste

  • 2 tablespoons olive oil

  • Optional toppings: fresh herbs, croutons, or a dollop of sour cream


  1. Heat the olive oil in a large pot over medium heat. Add the chopped onions and garlic, and sauté until they become soft and translucent, about 5 minutes.

  2. Add the chopped carrots to the pot and continue to sauté for another 5 minutes, allowing the carrots to develop some flavor.

  3. Sprinkle the ground cumin, ground coriander, and ground ginger over the carrots and onions. Stir well to coat the vegetables with the spices.

  4. Pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the carrots are tender.

  5. Use an immersion blender or transfer the mixture to a blender in batches (careful, it will be hot) to puree the soup until it's smooth and creamy.

  6. Return the pureed soup to the pot, and season with salt and pepper to taste. Simmer for an additional 5-10 minutes to allow the flavors to meld.

  7. Serve hot, garnished with your choice of fresh herbs, croutons, or a dollop of sour cream if desired.
